It is always polite to eat the food. If you do not eat it or feel uncomfortable with this, you can just say thank you and leave the food there. When you have had enough, just say “I’m full. Thank you.”
You can make some noise especially when you are eating noodles, but don’t tap on your bowl with your chopsticks because it is not polite.
